We do the normal - banana boats, s'mores, darn goods, bbq chicken, hot dogs & hamburgers... want something new & different. Any suggestions? There are 8 of us plus about 10 more during the 4th of July (this is an 11 day camping trip). Any suggestions?

Cowboy Beans1 pound lean ground beef1/2 cup chopped onion1/4 cup ketchup1/4 cup barbecue sauce1/4 c. granulated sugar1/4 c. brown sugar2 tbsp. sorghum or other molasses1 tbsp. chili powder1 tsp. salt1 tsp. pepper2 tbsp. mustard1 can (approx. 16 ounces) pork 'n beans1 can (approx. 16 ounces) butter beans, drained1 can (approx. 16 ounces) kidney beans, drained1 can (approx. 16 ounces) pinto beans, drained1/2 lb. bacon, cooked and crumbledCook ground beef until browned, breaking up and stirring as it cooks. Add onion and cook until tender; drain off excess grease. Add remaining ingredients, except bacon. Cook over campfire for 2 hours.

bananna's foster on the grill or fireMake small foil packets and line the inside with parchment paper. Fill with sliced banannas a sprinkle of brown sugar and a small drop of vanilla. Cook until warm and tender on the grill or BBQ, serve over vanilla ice cream if you like.

Not really a recipe but we always cook corn on the cob over the fire. It is always a big hit.Soak the corn husks and all. Cook on a grate over the fire for about 1/2 hour turning occasionally. Just peel brush with melted herb butter.

Campfire Foil Packs -- This serves 4. Put directly on coals of a bbq pit also..INGREDIENTS1 pound skinless, boneless chicken breast meat - cubed2 onions, diced1 (8 ounce) package sliced fresh mushrooms1 yellow bell pepper, seeded and sliced into strips1 red bell pepper, seeded and sliced into strips4 cloves garlic, sliced4 small potatoes, cubed1/4 cup olive oil1 lemon, juiced..DIRECTIONS1.In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well. 2.Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap. 3.Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes. ^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^ ^^^^^^^^^Grilled Corn in Husks --.INGREDIENTS 4 ears sweet corn, in husks1/4 cup butter, softened2 tablespoons minced fresh parsley1/4 cup grated Parmesan cheese..DIRECTIONS1.Carefully peel back husks from corn to within 1 in. of bottom; remove silk. Combine the butter and parsley; spread over corn. Rewrap corn in husks and secure with string. Soak in cold water for 20 minutes; drain. 2.Grill corn, covered, over medium heat for 20-25 minutes or until tender, turning often. Serve with Parmesan cheese. ^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^ ^^^^^^^^^Grilled Peaches with Berry Sauce -- Serves 4 also..INGREDIENTS 1/2 (10 ounce) package frozen raspberries in syrup, slightly thawed1 1/2 teaspoons lemon juice2 fresh peaches, peeled and halved5 teaspoons brown sugar1/4 teaspoon ground cinnamon1/2 teaspoon vanilla extract1 teaspoon butter or margarine..DIRECTIONS1.In a blender or food processor, process raspberries and lemon juice until pureed. Strain and discard seeds. Cover and chill. Place the peach halves, cut side up, on a large piece of heavy-duty foil (about 18 in. x 12 in). Combine brown sugar and cinnamon; sprinkle into peach centers. Sprinkle with vanilla; dot with butter. Fold foil over peaches and seal. Grill over medium-hot coals for 15 minutes or until heated through. To serve, spoon the raspberry sauce over peaches.

Peaches grilled out are very good!PocketsHave sliced potatoes, carrots, cauliflower, broccoli, onion, or any veggie you like. I have even put pork and bean and cheese in them.You can use ground beef, chicken pieces, hot dogs, or whatever meat you likeChoose from cream of chicken, golden cream of mushroom, cream of broccoli, or a cheddar cheese soup.This is a dish you can have whatever you like to choose from. Take a large piece of foil and spray it with cooking spray. Put a little soup on the bottom (1/4 cup) and place your meat on top of the soup. Add all the veggies and cheeses you would like to your pocket (everyone makes their own pocket). Top with additional soup and wrap securely. Double wrap this. Make sure your veggies are cut small enough to cook. This take about 40 minutes on the grill depending on how large everyone makes their pockets.

For breakfast if you have a griddle....I LOVE Chorizo and eggs!!!You can buy Chorizo at the store. In case you don't know about it, it's a kind of mexican meat! It's really good with eggs though! you buy it ground like ground sausage.I like to use about 3-4 tablespoons of the Chorizo for every 5 eggs I make. you just put the Chorizo on the griddle and cook it for about 5 minutes and then add your eggs and scramble it together. You can also make it with cubed potatoes! and you eat with Tortillas rolled up like a breakfast burrito, and add hot sauce or Tabasco sauce on it! mmmm, mmmm! I love it!!!Good luck and have fun! I love to camp!!!P.S. Also Pasta Salad is always a good thing to have when camping, if you have ways to keep it cold! I use the spiral pasta, cubed cheese, green onion chopped, green olives, seasonings, and italian dressing!

Angels On Horseback 1 Pack Hot dogs 12 oz. Uncooked Bacon American Cheese, sliced Toothpicks Campfire Skewers (the kind with LONG handles) Directions:Split the hot dog without going all the way through. Tear strips of cheese and tuck into the slit. Wrap the entire hot dog with a slice of bacon and fasten with toothpicks. Roast over open flame or hot coals until bacon is crispy-tender and hot dog is heated through. Comments:They're even better if you smother them with chili! "Happy" Chicken 1 Whole (uncut) fryer chicken 1 Can stout beer Dry seasonings of choice Directions:The night before you leave, prepare the chicken by washing and drying with paper towells. Rub seasonings of your choice over inside and outside of bird. Store in a large zip lock bag overnight. When you arrive at your campsite, fire up the grill and wait till coals are good and hot. Place an OPENED, full can off beer on the grill. Remove chicken from bag and place over the beer on the grill. The beer will now be inside the birds' cavity and the chicken will look like ti is sitting upright on the grill. (You may want to cover the tips of the wings so they don't burn) The beer will be absorbed as the chicken cooks. You will know it's done when the meat falls off the bone. Comments:A special treat for the first night out! (It's a good idea to use a meat thermometer to check the breast meat, just to be safe.) Pig in a Pot (Large Dutch Oven) 1 five pound pork bone in or out 1 large onion 6 cloves of garlic 1 large bell pepper 1 (small) bunch of cilantro Kosher salt Olive Oil Peppercorns 2 bottle of dark beer Banana Leaves(you can find banana leaves at any oriental grocery store) 1 cup of good Chardonnay Directions: Preparation: Do this at home, prior to leaving on your trip. Mince/grind all the veggies, add salt to taste. Poke holes in the pork butt, stuff veggie mixture into holes and rub them all over the pork. Put it into a gallon size zip lock bag and pour in the wine. Add a little more salt, zip the bag, and let it marinate in the fridge for at least a day or two before your trip. Cooking: At the site, wipe down each leaf and crack 8 peppercorns and sprinkle it on the pork. Rap pork in leaves, use as many as you need, and then place the pork in the dutch oven and pour in marinade and 1/2 cup of water. Place hot coals under the oven and on the lid and then cook it for about 1 hour. Then, pour in one beer (keep the coals hot!) and cook it for another hour. Then, pour in the last beer, cook for another hour to 45 minutes. Beer should caramelize and make rich broth that can be used as gravy. Comments:If you aren't going to cook it on the first day of camping, then after it marinates for a day or so, freeze it.Connie's Beans 1 Lb. Bacon, fried crisp, broke into 1 inch pieces 1 Lb. Italian Sausage, cooked, then sliced 1 16 oz. can of Tomato Sauce 1 large can Dark Kidney Beans 3 cans Cut Green Beans 2 cans Lima Beans 2 medium cans Baked Beans, Homestyle 2 Tbsp. Mustard 3/4 cup Brown Sugar 1/2 tsp. Garlic Powder Directions:Put all the ingredients in a large pot or dutch oven. Simmer 1-2 hours. Serve with biscuits on the side. Delicious. Boy Scouts love it! Chuck Wagon More: Main Dishes, Campfire Cooking Ingredients1 pound(s) ground beef (extra lean)1 can whole kernel corn1 can diced tomatoes1 c macaroni wagon wheels (or elbow macaroni)salt and pepperDirectionsPut macaroni in one quart of cold water and bring to a boil. Remove from heat. Brown ground beef, then drain any pools of grease. Drain macaroni, then add the browned beef to it. Drain water from can of whole kernel corn and in with the macaroni and beef. Dump the whole can of tomatoes (with the liquid) into the mixture and bring to a boil. Remove from heat. Serve and season to taste.Submitted by: Brian Wilson
