Check out Mountain Vacations by Funjet.Keystone Lodge or Breckenridge are nice resorts. If you visit either one and you like shrimp visit Bubba Gumps Shrimp House in Brekenridge. Its a restraunt based on the movie Forest Gump.
In late Feb my wife and I took our 6 & 8 year olds to Brian Head, Utah (about 3 hrs drive from Las Vegas). They have day camps for kids ($95 - full day, inclusive of rental and lift ticket) for both ski & snowboard. There are at least 5 different levels of ski instruction for the kids. There are also private lessons. My kids loved it. They were beginners, and by the end of 2 days of instruction they were skiing with me on the intermediate slopes. It was not crowded. There are two different hills - beginner/intermediate, and intermediate/advanced. Very family friendly. The resort we stayed in - Cedar Breaks Lodge - was very convenient.
